DESIGNATION

Leucos made by Petrelli winery is a Salento Typical Geographical Indication white wine produced from Moscato grapes. Wine produced with a circulation of 500 bottles per year.

BRIEF DESCRIPTION

Leucos is a white wine made from 100% Muscat grapes grown in Carmiano in the heart of Salento. This wine has a strong identifying character and is the classic and the only one dry Muscat wine made in the Italian region Puglia, with a residual sugar of approximately 6 g/l. Fabulous aromatic smell, amazing cleanliness and long aftertaste.

VINIFICATION

The vine training system used is the spurred cordon with a density of vines of approximately 5000/ha with a final grape yield of 60 quintals per hectar. The grapes are harvested in the second ten days of September and then undergo a classic white vinification in steel with temperature control.

PAIRINGS

Perfect to pair with very fresh sea urchins. Try it with grilled prawns and spaghetti with bottarga. It can accompany dry biscuits and apple pie at the end of a meal.

DESIGNATION

Danze della Contessa is a white wine made in Bonsegna winery, produced from Chardonnay grapes cultivated in the Salento area. Wine produced with a circulation of 25.000 bottles per year.

BRIEF DESCRIPTION

This chardonnay has a straw yellow color with greenish reflections, offers floral and fresh fruit scents on the nose, revealing good balance between savory minerality and correct acidity on the sip.

 

VINIFICATION

After the night harvest of the grapes, there is a soft pressing of carefully selected grapes, with immediate thermal blast chilling of the must, and fermentation at a controlled temperature of 16-18 degrees. Wine not aged in wood barrel.

PAIRINGS

Pairs perfectly with the seafood dishes of the Salento seafood tradition. Also excellent on dairy products and fresh cheeses.

DESIGNATION

Cenate Vecchie is a rosè wine made in Bonsegna winery, produced from Negroamaro indigenous grapes. Wine produced with a circulation of 20.000 bottles per year.

BRIEF DESCRIPTION
This splendid rosé has a bright pink color, with fruity notes of raspberry and pomegranate, with good acidity, correct flavor, savory freshness, and a long and satisfying aftertaste.

 

VINIFICATION

After harvesting the Negroamaro and Malvasia Nera grapes, we proceed with the vinification with the traditional Salento rosé technique, with brief maceration of the skins, at a controlled temperature, for about 10 hours. Maturation in steel for six months, after which the wine is bottled.

PAIRINGS

A wine that is well suited to pairing with typical traditional Salento dishes, based with tomato sauce, fish dishes and white meats.

DESIGNATION

Le Pozzelle made by Candido winery is a Salice Salentino DOC rosè wine produced from Negroamaro and  Malvasia Nera grapes. Wine produced with a circulation of 25000 bottles per year.

BRIEF DESCRIPTION

This is one of the Salento region’s famous rosè wines, which are among the world’s absolute finest. Bright coral pink in colour, rich, opulent and floral with fine fruit on the nose. On the palate it is harmonious, rich and delicious with a pleasantly bitter aftertaste.

VINIFICATION

Wine obtained with the classic method of long contact on the skins. The destemmed and crushed berries are cold macerated for some 20 hours after which a part of the juice, less than 35%, is drained off and fermented in stainless steel using cultured yeasts. Wine aging in stainless steel an bottle.

PAIRINGS

Matches well with a wide variety of dishes, especially appetizers, thick broths, egg dishes, white and red meat, fish soup.

DESIGNATION

Tenuta Paraida made by Marulli winery is a Copertino DOP rosè wine produced from  100% Negroamaro grapes growth with the traditional Apulian sapling system. Wine produced with a circulation of 15000 bottles per year.

BRIEF DESCRIPTION

This rosé wine has an intense and brilliant cherry colour, with a rich, composite and fruity bouquet with hints of raspberry, cherry and peach blossom. The taste is dry, harmonious, with a herbaceous background combined with a pleasant bitter aftertaste.

VINIFICATION

The Negroamaro grapes are softly pressed and left in contact with the must for approximately 6-8 hours, enough time to obtain the right pink shade of the finished product. During fermentation the temperature is maintained around 18-20 °C. Aging in stainless steel and bottle.

PAIRINGS

Wine to drink throughout the meal. It goes perfectly with all Italian and Mediterranean cuisine. Perfect to pair with sushi and sashimi and raw seafood.

DESIGNATION

Metiusco Rosato made by Palamà winery is a Protected Geographical Indication rosè wine produced with the old Salento vinification system, from Negroamaro grapes made from old vines. Wine produced with a circulation of 25000 bottles per year.

BRIEF DESCRIPTION

Metiusco Rosato is a wine of extraordinary complexity. On the nose it is a wine rich in red fruit with raspberries and cherries above all, pink and purple flowers, citrus fruits with light orange peel and delicate hints of spices. On the palate it is savory, dry, concentrated and with a long finish.

VINIFICATION

Vinified according to the bloodletting technique: once destemmed, the crushed grapes are placed in cryomaceration for a period ranging from 10 to 30 hours, after which 30% of the must is salted. This particular process creates a rosé with great structure, surprisingly fresh and balanced.

PAIRINGS

Perfect to pair with white meats, and in summer it is perfect to drink chilled together with meats cooked on the barbeque and grill. It goes perfectly with vegetable-based first courses with fish and shellfish stews. Also excellent in combination with pizza.

DESIGNATION

Centopietre made by Petrelli winery is a Salice Salentino DOC red wine produced from the classic Salento vines Black Malvasia 15% and Negroamaro 85%. Wine produced with a circulation of 10000 bottles per year.

BRIEF DESCRIPTION

Centopietre is a wine that has an intense and delicate ruby red color in the glass. In the mouth, Malvasia gives hints of ripe fruit, such as plum or morello cherry, and then there are aromas of black spices and liquorice. The flavor in the mouth is soft, warm, balanced, harmonious and long persistent with a slightly balsamic finish.

VINIFICATION

The vineyards are 40 km from the sea, the training system used is the spurred cordon with a final grape yield of 100 quintals. The wine is obtained with maceration in steel for 10 days. Once fermentation has taken place, the wine rests and refines in steel for a few months and is then transferred to American oak barriques for 6 months and finally another 2 months in the bottle.

PAIRINGS

Perfect wine to pair with typical Pork Spare Ribs, or with a succulent beef steak. It also goes well with tagliatelle with meat sauce and with cured meats and mature cheeses.

DESIGNATION

Cappello di Prete made by Candido winery  is a a Typical Geographical Indication wine produced from 100% Negroamaro grapes. Wine produced with a circulation of 25000 bottles per year.

BRIEF DESCRIPTION

A deep, ruby red colour with purple tints characterize this rich, spicy, vanilla flavoured wine. On the palate this first class wine is rich and
full bodied with rounded velvety flavours.

VINIFICATION

The vine training system used is Guyot-trained counter-espalier with a final grape yield of 90 quintals per hectar. The destemmed grapes are macerated in stainless steel tanks for several days. After malolactic fermentation, the wine is matured in small oak barrel.

PAIRINGS

Perfect to pair with Steamed fish, roasted or grilled beef, hard cheeses. but also with a good hamburger accompanied with French frays.

DESIGNATION

Puteus made by Mocavero winery is a Salice Salentino DOP red wine produced from 100% negroamaro old vines grapes. Wine produced with a circulation of 25000 bottles per year.

BRIEF DESCRIPTION

Puteus in the glass presents deep red color with hints of violet, on the nose it presents aromas of small red fruits, and a strong spicy bouquet. In the mouth the taste is extraordinarily rich with notes of cocoa and coffee, fruity such sour black cherry in alcohol. Long harmonious and fragrant finish.

VINIFICATION

Classic red wine process, with prolonged contact time between marc and must to allow more coloured, aromatic and tannic substances to be extracted and to make sure the wine is well structured for ageing.

PAIRINGS

Ideal to combine with roast meat, grill beaf, strong flavour burger, wild fowl, spicy dishes and cold meats and cold cuts, mature cheese.

DESIGNATION

Primo made by Bonsegna winery  is a a Typical Geographical Indication wine produced from 50% negroamaro and 50% primitivo grapes. Wine produced with a circulation of 15000 bottles per year.

BRIEF DESCRIPTION

The wine in the glass has an intense and deep red color. A wine with a full austere and elegantly Mediterranean flavour, with warm notes of ripe red fruit and sweet tobacco spiciness. With good acidity and correct alcohol content, it presents a harmonious and appropriately tannic finish.

VINIFICATION

The grapes are produced in owned vineyards in the Cenate Vecchie and Carignano districts, in the city of Nardò with a yield of 50 quintals. Harvest with manual harvesting and separate vinification of carefully selected Primitivo and Negroamaro grapes. Blending of the wines, and maturation in barrique for 8 months, with refinement in bottle for another 6 months.

PAIRINGS

To be combined with great dishes of Mediterranean cuisine based on meat, with roast beef, grilled beef, pulled pork, BBQ pork ribs and well-matured cheeses.
